VẬT LIỆU:
- 2 bịt khoai mì đông lạnh hoặc 1 pound củ khoai mì (16oz) (Cassava or frozen shredded cassava, tightly packed)
- 1 bịt dừa non đông lạnh (7oz) (Coconut shredded, tightly packed) (optional)
- 1/2 cup đường (sugar, you can add more for your taste)
- 2 trứng gà (eggs)
- 2 tbsp bột năng (tapioca starch)
- 1 gói vani (1 pack of vanilla sugar or 1 tsp vanilla extract)
- 2/3 cup đậu xanh cà không vỏ (slit mung bean)
- 1 tbsp bơ (butter)
- 1/2 tsp muối (salt)
- 1/2 lon sữa đặt (can condensed milk) (optional, but you need to add 1/2 cup of sugar)
- 1 lon nước cốt dừa (can coconut cream)
Prepare:
- Đậu xanh ngâm nước 3h, nấu chín, tán nhuyễn.
- In a bowl wash the mung beans thoroughly. Pick out and discard any bad-shaped beans and little stones, then soak them for at least 3 hours before cooking. It's best to let the beans soak overnight. Place the mung beans in a sauce pan, barely cover with water and bring to a boil, then lower to medium-low heat and cook for 30 minutes, then mashed.
- Có thể không cần tán nhuyễn đậu xanh, mà cho đậu xanh đã hấp chín vào máy sinh tố + nước cốt dừa + đường vào xay nhuyễn.
- Instead of mash the mung been, you can use a blender, add in cooked mung bean + coconut cream + sugar and blend well. Find your easy way.
- Mài khoai rồi cho vào bao vải vắt bỏ nước vàng (để riêng khoảng 15’ sẽ thấy tinh bột lắng xuống, đổ nước đi lấy tinh bột này sẽ ăn ngon hơn là dùng bột năng)
- Shredded the cassava then run water and squeeze the shredded Cassava to remove yellow water. Put aside. See picture.
Direction:
- Trộn khoai mì (và tinh bột khoai mì), dừa nạo, hỗn hợp đậu xanh, trứng, bơ, bột năng, vanila, sữa đặt, và muối. Trộn hỗn hợp cho thật đều.
- In a large bowl, combine shredded Cassava, shredded Coconut, mung bean + coconut cream + sugar mixture, eggs, butter, tapioca starch, vanilla sugar, condensed milk, and salt. Mix well until all ingredients all well combined. The mixture should be homogenous like a thick cake batter. Smell good already.
- Chế hỗn hợp vào khuôn đã tráng dầu.
- Coat the sides of 2 non-stick round cake pans with a thin layer of butter. Place a disk of wax paper in the bottom of the pan. Pour the cake mixture into the greased pans. Even the batter with a spatula and by gently lifting and dropping the baking pan several times.
- Vặn nóng lò, Cho vô lò nướng 350F khoảng1 tiếng, cho tới khi xâm tăm không dính. Để nguội, trút ra khỏi khuôn.
- Preheat oven, bake at 350°F for 1 hour. The edges of the cake should be slightly golden and dry. To test the doneness of the cake, poke with a toothpick. The toothpick should come out grainy, but not "liquid-y" at all. Remove cake from the oven, let it cool for at least 10 minutes.
