Xôi Mặn (Chinese Sticky Rice) Part Deux


Ingredients:
3 cups of chicken broth (2 bone-in chicken thighs**)
2 cups of glutinous rice soaked overnight
2 tbsp cup of soy sauce
2 tbsp of oyster sauce
1/2 cup of sliced dried shiitake mushrooms
4 links of sliced chinese sausage
**hand pulled chicken thigh meat
1/4 cup of sliced spring onions (just the pale part)
1 tbsp chopped garlic
1 tbsp chopped ginger

I soaked about a 1/2 cup of these guys overnight and just thinly sliced them the next day. Just make sure you give them a few good squeezes and rinses or the "umami" flavor will be quite strong. 
Soaked glutinous rice over night thrown into a large mixing bowl.
Now add the mushrooms, chicken, and chinese sausage to the mixing bowl.
Pour in the sauce (soy sauce, oyster sauce). 

Then pour in the chicken broth. Mix well. 
In a large pot, add 1 TSP of canola oil, wait until hot, then add spring onions. Stir well and allow to brown.

Lower heat and pour the mixture in. Cook on very low heat coverd for about 20 minutes. Check often on the rice's tenderness. As you can tell, the water level is covering the rice. 
After 20+ minutes, everything is well cooked. Take off stove and pour into a large bowl. Serve warm. I forgot to take a picture of my adding the sliced spring onions (green part) but do add some! 

Xôi Bắp - Nấu Bằng Microwave


Nguyên Liệu:
- 1 lbs nếp hạt dài (1 pound glutinous rice)
- 1/2 thìa cà phê muối (tùy ý) (salt)
- 1 lon bắp hầm của Mỹ (1 can of white Hominy)
- hành phi (fried shallots)
- dưà nạo (coconut shredded)
- 1 cup đậu xanh (nấu chín, giã nhuyễn) (mung bean, steamed and mashed)
Mung bean wash and soak in the hot water for 2 hours. Drain and steam for 15 minutes and mash, and make it to a ball.
- Muối mè: 1/4 cup roasted peanut, 1 tbsp sugar, 1/2 tbsp salt, 
crush roasted peanuts, then mix with sugar and salt.




Cách Làm: 

  • Ngâm nếp độ 3 tiếng đồng hồ trong một cái tô to sau khi đã rửa nếp cho sạch. Chắt bớt nước, giữ nước xăm xắp. 
  • Chắt bớt nước trong lon bắp, trộn chung bắp với nếp và muối. 
  • Cho vào Microwave nấu 3 phút, lấy ra đảo nhanh. 
  • Cho trở vào microwave nấu thêm 3 phút nữa, lấy ra, đảo cho đều, cho trở vào microwave nấu thêm 3 phút nữa, hoặc thấy xôi chín, lấy ra đảo nhanh cho xôi không bị ướt dưới đáy tô.
  • Glutinous rice soaked in water for 3 hours in a big microwavable. Clean and add water just at glutinous rice level.
  • White Hominy drain and mix with glutinous rice and salt.
  • Put the bowl of mixture in the microwave for 3 minutes, take the bowl out and stir quick. 
  • Put the bowl back in the microwave and repeat for few more time or until cook.

Khi ăn, múc xôi ra đĩa, cho đậu xanh, dùa nạo, muối mè, hành phi lên.


    Serve as, have rice and hominy mixture on a plate, great mung bean, coconut shredded, generously sprinkle fried shallots and peanut, sugar, and salt mixture on top.



    NOTE: Cách này có thể áp dụng cho tất cả loại xôi, trừ xôi vò.
    This method can apply to any Xôi, except Xôi Vò (Sticky Rice with Mung Bean)
